Homemade Cream of Mushroom Soup

  • 3 Tbsp olive oil
  • 2 Garlic cloves
  • ½ Onion, chopped
  • 3 Tbsp butter
  • 5 Cups mushrooms, roughly chopped
  • 1 Tsp dried thyme
  • ½ Tsp dried rosemary
  • 1 Tbsp balsamic vinegar
  • 6 Cups vegetable broth
  • 1 Cup heavy cream
  • Salt and pepper to taste
  1. Heat olive oil in a pot over medium heat. Cook onion until transparent, around 3 minutes.
  2. Add garlic and cook for 2 more minutes or until fragrant. Add butter, dried thyme and rosemary.
  3. Once the butter has melted, incorporate mushrooms and cook stirring occasionally until they are golden. Scoop some out to use as a topping.
  4. Stir in the balsamic vinegar and cook until it has reduced and the mushrooms are slightly caramelized.
  5. Pour stock bring to a gentle simmer. Cook for 10 minutes.
  6. Pour soup into a blender and pulse until creamy. Return to pot, mix in heavy cream, salt and pepper and cook until warm
