Slow Cooker Italian Chicken

  • 3 lbs boneless skinless chicken breasts
  • 2 cans (10-12 oz) cream of chicken soup
  • 1 (0.7 oz) packet dry Italian dressing mix
  • 1 (8oz) block of cream cheese
  • 1 cup diced onions
  • 1 cup frozen spinach
  • 1 (14.5 oz) can Red Gold diced tomatoes with basil, garlic and oregano
  • ½ cup milk or cream
  • salt and pepper
  • fresh basil
  • parmesan cheese
  1. Place chicken in crockpot and top with Italian dressing and cream of chicken soup.
  2. Cook on high 4 hours or low for 6 hours
  3. After cooking, shred the chicken with two forks.
  4. Add the spinach, onion, cream cheese, milk or cream and Red Gold Tomatoes and stir to combine.
  5. Continue to cook on high until cream cheese is melted, about 15 minutes.
  6. Add salt and pepper to taste.
  7. Serve over pasta and top with fresh basil and parmesan cheese.
  8. Note: You can make your own cream of chicken soup or there are now organic, all natural soups available at your local grocery store.
