Lunch Box Ham and Cheese Biscuits

Ingredients
  • 1¼ cups white flour
  • ¾ cups whole wheat flour
  • 1 Tbls baking powder
  • 1 Tbls sugar
  • 1 tsp salt
  • 6 Tbls cold butter
  • ¾ cup AE Lowfat Buttermilk (or any AE Dairy milk will work)
  • Ham (any kind)
  • Cheese (any kind)
Instructions
  1. In a large bowl, add the dry ingredients and mix with a fork.
  2. Cut the butter into small pieces and add to the dry ingredients and mix with your hands.
  3. Pour in the buttermilk and stir with a fork until just combined (do not overmix)
  4. Roll the dough into a ball and transfer to a floured surface. Pat the dough to about ½ inch thick and fold in half. Repeat.
  5. Place a towel over the dough and let rest for 30 minutes (you could also let rest overnight)
  6. Preheat oven to 425
  7. Using a small glass jar or a cookie cutter, cut 16 dough circles (you may have more or less circles based on the size of your glass)
  8. Lay half of the circles on a nonstick baking sheet and top with ham and cheese.
  9. Top with another dough circle and pinch the edges together.
  10. Bake for 12 minutes
