Slow Cooker Turkey Chili with Hidden Veggies

Ingredients
  • 1.5 - 2lbs ground turkey
  • 1 small onion diced
  • (2) 15.5 oz. cans black beans
  • (1) 15.5 oz. can kidney beans
  • (1) 2lb 6 oz jar of salsa
  • (1) 4.2 oz packet of spinach puree
  • 1 Tbls Chili powder
  • 1 Tbls cumin
  • 1.5 cups of chicken broth
  • 1 Tbls olive oil
Instructions
  1. Heat 1 Tbls olive oil over medium heat. Brown the turkey and saute the onion and add to the slow cooker.
  2. Add the beans, salsa, spices and chicken broth to the slow cooker and cook on low about 6 hours.
  3. Add the spinach puree about 15 minutes before serving. If the chili turns too green, add 1 Tbls paprika.
  4. To make an extra large batch, follow the directions and add an additional 1.5 - 2lbs ground turkey, 1 can kidney beans, 1 4.2 oz packet of spinach puree, 1 Tbls chili powder, and 1 cup broth.
