So, my husband told me this Sunday is the Super Bowl. I would have never known that if I didn’t have a sports fan in the house. I do like the food though- all of the good and greasy traditional football food. I wanted to do a combination of two of my favorites: jalapeño poppers and crab rangoons. There’s no crab in this recipe, but wow, wouldn’t that be a delish addition?
The filling is simple. There is cream cheese, parmesan, garlic, chives, soy sauce, salt and pepper. If you wanted to add crab, now would be the time to do it. You could experiment with different cheeses too.
Add some crab and deep fry and you’ve got probably the best Super Bowl appetizer ever. I’ve become quite obsessed with this jalapeño popper dip too which is piled with butter and ritz crackers, but hey, that’s ok for game day, right? I haven’t tried it yet, but I have been imagining the dip spread on a cheeseburger.
I did bake these poppers, but I’ll admit, frying probably tastes the best.
Wonton-Wrapped Jalapeño Poppers
Makes about 20 poppers
Ingredients:
10 Jalapeños
1 pkg. wonton skins
(1) 8 oz. pkg cream cheese
1/2 cup Parmesan cheese
1 tsp minced garlic
1 Tbl. green onion
1 Tbl. soy sauce
salt and pepper
2 Tbl. melted butter
1. Mix together cheeses, garlic, green onions, soy sauce, salt and pepper.
2. De-vein and de-seed the jalapeños and cut them in half.
3. Add 1 Tbls. of the filling to each jalapeño. Wrap each jalapeño with a wonton wrapper and secure with water. (Check the wonton wrapper instructions if you’ve never done this before) If you are using large jalapeños you might have to use two wrappers.
4. Arrange the jalapeños on a non-stick sprayed baking sheet. Brush each popper with butter and bake at 425 for 15 minutes or until brown and crispy. Serve with sweet chili sauce!
