Ever since I was introduced to fridge oatmeal, I’ve been trying to come up with variations. This berry oatmeal has been a big hit, but I’ve been trying to come up with a coffee flavored variation for the hot summer months when the last thing you want is hot oatmeal and hot coffee.
The first time I tried International Delight’s Iced Coffee I knew it would work perfectly in refrigerator oatmeal. The sweet and creamy Mocha flavor turns the oatmeal into the perfect chocolate coffee summertime breakfast.
Iced Coffee Refrigerator Oatmeal
- 1 1/2 cups Old Fashioned Oats
- 3/4 cup vanilla yogurt
- 3/4 cup International Delight Iced Coffee, any flavor
- additional toppings: honey, flax seeds, granola or cinnamon
Mix all ingredients in medium sized Tupperware container with lid. Keep in the fridge overnight. Top oatmeal with a drizzle of honey, cinnamon, granola, flax seeds, or coconut. Serve cold. You could even pour a bit more of the International Delight Iced Coffee over the top! (Serves 2)
