I like Trader Joes immensely, but I can sure do some damage there. I recently picked up a box of Candy Cane Joe-Joes, which are basically Oreos with candy canes mixed in with the frosting. They only come out right before Christmas, so if you need your fix you better stock up!
I’m glad I had these in my pantry (and I didn’t tear into them yet) because my husband broke the news to me the day before they were having a potluck at work.
His request: ice cream cake.
Let me tell you, this ice cream cake beats Dairy Queen’s any day, and those Dairy Queen ice cream cakes are pretty darn good.
Candy Cane Joe-Joe Ice Cream Cake
First, you put your Joe-Joes (or Oreos) in a Ziploc bag and beat with a rolling pin or mallet until you are free of all of your stress and frustrations. Dump them in a 13x9x2 inch pan and press down.
Then, warm up a jar of hot fudge (you can do low cal or reduced fat) and slather it all on those Joe-Joes.
Then you proceed with ice cream, your flavor of choice, until you reach your desired amount. I put about 1 inch of ice cream all the way around. This works best with soft ice cream and don’t be afraid to press it down with your clean hands.
I think my fingerprints give it a nice design, right?
A container of Cool Whip is the next layer, and again, you can used reduced fat or low cal. The ice cream cake isn’t complete without a drizzle of chocolate syrup and of course, a few crushed candy canes for that holiday look.
This ice cream cake is extremely versatile, you could use any flavor Oreos or ice cream and you could even be creative with the toppings.
Candy Cane Joe-Joe Ice Cream Cake
1 package Trader Joe’s Candy Cane Joe-Joes or Candy Cane Oreos
1 jar of Hot Fudge
About 1.5 quarts Vanilla Ice Cream
1 container Cool Whip
Drizzle of Chocolate Syrup
A few small candy canes, crushed
- Place Joe-Joes (or Oreos) in a ziploc bag and beat with a rolling pin or mallet until crushed. Dump them in a 13x9x2 inch pan and press down.
- Warm up a jar of hot fudge (you can do low cal or reduced fat) as per jar instructions and spread over Oreos.
- Then, spoon soft ice cream, your flavor of choice, until you reach your desired thickness. (I put about 1 inch) This works best with soft ice cream. Don’t be afraid to press it down with your hands.
- Spread a container of Cool Whip on for the next layer. Add a drizzle of chocolate syrup and a few crushed candy canes.
- Freeze overnight. Enjoy!

@ Stefani: I believe they are only there for a short window of time. You could also use regular Oreos and Candy Cane Ice Cream.
I have been to Trader Joes, but haven’t seen Candy Cane Joe-Joes. I will have to be on the lookout.
