Salmon and Cucumber Salad Recipe

Salmon is one of my favorite fish. You can have delicious salmon any day of the week with Bumble Bee’s salmon in pouches. Pair it with fresh vegetables and Greek Yogurt and you have a nice, light salad which is perfect for lunch. (I will be using some tomatoes from my Topsy Turvy, which is growing like a weed!) Sweet and Spicy Tuna Wonton Cup Recipe

If you don’t like Tuna, trust me, you will like this appetizer recipe. The wonton cups are the fun part, but the sweet and spicy salad inside is delicious. These Sweet and Spicy Tuna Wonton Cups are perfect to serve at parties and super easy to make. It’s so delicious you can just turn this into a huge salad and have it for lunch. You can try many different variations of this: skip the slivered almonds and add toasted ramen noodles or sunflower seeds. Try it with different lettuces or cabbage. This is my favorite variation. Sweet and Spicy Tuna Wonton Cups

Ingredients

  • 24 Wonton Skins
  • 1 Tablespoon Extra Virgin Olive Oil
  • 1/2 cup slivered almonds
  • 1/2 cup green onions, thinly sliced
  • 2 Romain hearts, shredded
  • 2 cups Napa Cabbage, shredded
  • 1 (5oz) can (Bumblebee) Spicy Thai Chili Tuna Medley
  • 2 tsp. sesame seeds
  • Nonstick cooking spray

Dressing

  • 6 Tablespoons Extra Virgin Olive Oil
  • 3 Tablespoons vinegar
  • 4 Tablespoons sugar
  • 2 teaspoons soy sauce

Directions

  1. Preheat oven to 350. Spray the mini muffin tin with nonstick cooking spray and arrange wonton skins in muffin tin to create cups. Bake until golden brown, around 10 minutes.
  2. Place  1 Tablespoon Extra Virgin Olive Oil in heated skillet and toast almonds. Set aside.
  3. Wash and thinly slice romaine, napa cabbage and green onions. Place in bowl.
  4. Drain Tuna and mix with lettuce mixture. (This is easiest with your hands. You want an even amount of tuna throughout).
  5. Mix all ingredients together and place a little of the mixture in each wonton cup! Sprinkle with sesame seeds.

Baby Vegetable and Feta Summer Salad Recipe

I was at my mother-in-law’s house and she had a bulk package of baby cucumbers and baby bell peppers of all colors. After trying them, I had to get get a few packages for myself. Baby cucumbers are crunchy and used a lot to make pickles- they even taste a little like pickles. Lately I’ve been trying to add more veggies to my diet, so I decided to make a delicious veggie salad.

Baby Vegetable and Feta Summer Salad

  • 1-2 Baby Cucumbers
  • 3 Baby Sweet Bell Peppers (red, yellow, orange)
  • 1/4 cup Red Onion, sliced
  • 1 Hard Boiled Egg
  • Feta Cheese, crumbled
  • dash of Salt and Pepper
  • Italian Dressing (or your favorite vinaigrette)

Slice the cucumbers, bell peppers and onion. The recipe above is usually what I make for myself, so about one serving. Dice up the hard boiled egg. Add feta cheese and a dash of salt and pepper. Pour a little Italian dressing or your favorite vinaigrette over the top and lightly mix.
