Vitalicious offers you delicious low calorie servings that are not only filling, but are a great source of vitamins. They are healthy, so don’t expect loads of sugar, but the quality and the calories saved makes up for the lack of tons of sugar. If you are really trying to slide by a healthy snack on your family, I say stick with the chocolate flavored Vitatops for some reason with chocolate it is a lot easier to hide the health factor. Their chocolate Vitatops are a big hit with Hungry Girl. My favorite of the non-chocolate variety are the CranBran and Banana Nut Vitatops. My husband isn’t a big fan of healthy snacks, but he ate the VitaBrownies and actually liked them. I was so shocked! Chicken and Gnocchi Soup

A few months ago I had tried a Chicken and Gnocchi soup at Olive Garden that I really liked. Gnocchi (pronounced nyoh key) is a potato dumpling. The other day I was sitting at home craving the soup and decided to take it upon myself to find out if anyone else has figured out how to make something similar at home. The great thing about this recipe is that when you are planning to make the soup – you can chop up the veggies the night before and pre-cook your chicken or buy chicken that is already cooked. The soup cooks pretty quickly, so it is an easy meal to make.

Chicken and Gnocchi Soup

Ingredients:

  • 3-4 chicken breasts, cooked and diced
  • 4 cups of chicken broth
  • 1 stalk of celery, diced
  • 1 garlic clove, chopped
  • 1 carrot, shredded
  • 1/2 onion, diced
  • 1 tablespoon olive oil
  • 1 teaspoon of thyme
  • salt and pepper to taste
  • 16 ounces of potato gnocchi (found in the grocery aisle with pastas)
  • 1 1/2 cups of half and half
  • 1/2 cup of heavy cream
  • 1 cup of fresh spinach, chopped

Directions:

  • Saute the onion, celery, garlic, carrot and onion in oil over medium heat.
  • Add chicken, chicken broth, and thyme. Heat to boiling, then add gnocchi. Gently boil for 4 minutes, then turn down to a simmer for 5 minutes.
  • Add half and half and heavy cream and simmer for another 5 minutes.
  • Add spinach and cook for another 1-2 minutes until spinach is wilted.
  • Serve and enjoy!

Monkey Bread Recipe

monkeybreadMy boys woke up WAY earlier than I’d hoped this morning, but what’s a mom to do? I cleared off the dining room table, made myself a cup of hot chocolate, and sat back and watched my boys make me breakfast!

Monkey bread has been one of my favorites since I was a little girl and it’s so easy that even my 3-year old and 5-year old could do it with minimal assistance.

We enjoyed our monkey bread with a glass of cold milk but I’m told it’s good with coffee too. The boys could not be prouder that they made this themselves!

Ingredients

  • 1 Cup Sugar
  • 1 Tbsp. Cinnamon
  • 4 Cans of refrigerator biscuit dough
  • 1/2 Cup butter
  • Optional: Chopped pecans or raisins

Directions

  1. Preheat oven to 350 degrees.
  2. Grease or butter the inside of a bundt pan or tube pan.
  3. Combine cinnamon and sugar in a large Ziploc bag or a bowl with a tight lid.
  4. Break each of the raw biscuits into 3-4 pieces and drop in the cinnamon/sugar mixture a few at a time. Seal the bag or bowl and shake to coat all pieces. Drop the coated dough into the pan.
  5. If you’re using nuts or raisins, sprinkle them evenly around the pan after about half of the dough is in.
  6. When all of the biscuits are coated and in the pan, melt the butter in a saucepan. Add the remaining cinnamon/sugar mixture and bring to a boil, stirring frequently.
  7. Pour the cinnamon/sugar/butter “syrup” evenly over the dough in the pan.
  8. Bake for 30-40 minutes. The top should be slightly crunchy and the biscuits should be done.
  9. Let sit in the pan for a few minutes to cool, then carefully turn out onto a cake plate. Be very careful as any “syrup” that drips out of the pan will be VERY hot and VERY sticky.
