Summer Make-Ahead Meals

I love make-ahead meals! When the weather is warm, I cook outside on the grill as much as possible. This is where my frozen marinated meats come in handy. When chicken goes on sale, I marinate the chicken in freezer bags. You can freeze them for about 3 months. Here is my frozen (uncooked) Teriyaki Chicken. I usually defrost the frozen marinated meat in the refrigerator the day before I need it or defrost it in the microwave.

I also marinate steaks when the price is right. I even make some single serving frozen packages for my college son to take back to his dorm, so he can cook and enjoy some food from home. McCormick makes some tasty marinades. My family loves this Grill Mates pre-packaged seasonings.

If you’re looking for some quick meals to freeze, I suggest freezing your cooked taco meat, spaghetti sauce with meatballs, and sloppy joes. These meals can be defrosted in the microwave and are heated in less than 30 minutes for a quick meal that doesn’t heat up your kitchen. Taco meant, Spaghetti sauce with meatballs, and Sloppy joes are all found in my cookbook.

When ground beef goes on sale, freeze some hamburger patties to have on hand for a quick barbecue! They just take a few minutes to defrost in the microwave.

You don’t need to spend all day preparing these meals ahead. Find an hour here or there when it works for you. You’ll find that it saves you money, trips to the grocery store, and it’s healthier than fast food take-out meals.

Home Free cookies

Home Free was founded by Jill Robbins, a clinical psychologist and author of “Allergen Free Baking,” turned to baking when her son was diagnosed with severe food allergies. Jill’s goal was to create delicious, wholesome treats that her son, and everyone with or without food allergies, could enjoy together. Today the company makes a variety of cookies and coffee cakes in a dedicated baking facility, where it conducts allergen testing on ingredients and random product batches to ensure that each product is free of common food allergens.

Home Free cookies are:
• Certified organic
• Certified whole grain – each cookie serving contains at least ½ serving of whole grains
• Free of peanuts, tree nuts, eggs and dairy
• Without trans fat or cholesterol
• Fine for most people allergic to wheat (not gluten-free; contain oats)
• Fine for most people allergic to soy (most contain soy lecithin)
• Baked and packaged in a dedicated bakery
• Allergen tested
• Without corn sweeteners, artificial colors, artificial flavors, MSG, and genetically modified organisms (GMOs)
• Certified vegan (oatmeal cookies, and coffee cakes)
• Certified kosher pareve

Home Free bakes in small batches, takes time for allergy education, and donates regularly to food pantries and to allergy related organizations.

I was sent Home Free’s Organic Chocolate Chip Cookies, Organic Mini Oatmeal Chocolate Chip Cookies, and Organic Chocolate Chip Mini Cookies to try. Oh my goodness! These cookies are so delicious! I would’ve never guessed these cookies were free of dairy and eggs – there is no weird aftertaste or lack of flavor! The regular sized cookies are softer and a more moist type cookie. The minis are a little bit harder, but nonetheless just as yummy. These are such a delicious treat for kids with food allergies. Even though we don’t have food allergies here, I will definitely be purchasing more of these for me my family since I love the option of having healthier cookies in the house for snacks. These will definitely be handy whenever we are at a playdate with my little guy’s friends that have food allergies (which in our playgroup we have a few) so that the parents won’t have to worry that their little one may accidentally ate the non-allergy friendly snack.

Wonder Sandwich Bread Now Includes More Nutrition! {Giveaway} – CLOSED

classic_whiteSoft. Delicious. Nutritious. is their slogan and did you know that two slices of Wonder sandwich bread provide the Calcium of 8 Ounces of Milk and a good source of Vitamin D? Most Americans aren’t getting the calcium they need and I must admit- neither am I.

As a mom, it is my duty to provide my child with the nutrition he needs to grow and be healthy.  But lets face it- there are so many factors that can lead to unhealthy eating habits in children: money, time and pickyness are a few that come to mind.  So how can you balance a healthy lifestyle with your busy schedule, your picky eaters and your budget?

The US Department of Health and Human Services lets us know of three key facts to help lead a healthy lifestyle.

  • Eat a healthy diet that includes fruits, vegetables, and whole grain products — and be sure to control portion sizes.
  • Get physically active at least five times a week, for thirty minutes or more.
  • Avoid tobacco and illegal drugs altogether.

Wonder has a long history of helping us lead a healthy lifestyle.  They were one  of the first national bread brands to feature nutritional information on its packaging and in the 1940′s Wonder was a pioneer in a government sponsored program to enrich breads with vitamins and minerals.

I was not aware of their early efforts to be healthier, but I do remember growing up with Wonder Bread.  I specifically remember opening up the bread drawer to see those signature dots on the packaging.  I grew up with four siblings, so we would have like five different packages at a  time (Dots everywhere!)  My family did try the new Classic White and Classic Sandwich Bread and you know what?  It tasted like the same good ole’ Wonder bread.  Thats awesome!  Don’t you like deceiving your child? (Ha, I don’t mean it like that!) I mean, don’t you like it when you have a picky eater and then you sneak in something that is healthy for them, but it tastes good so they don’t notice?

Head to your local grocery store and look at the variety of Wonder products.  There is something for everyone!
