Chicken and Gnocchi Soup

A few months ago I had tried a Chicken and Gnocchi soup at Olive Garden that I really liked. Gnocchi (pronounced nyoh key) is a potato dumpling. The other day I was sitting at home craving the soup and decided to take it upon myself to find out if anyone else has figured out how to make something similar at home. The great thing about this recipe is that when you are planning to make the soup – you can chop up the veggies the night before and pre-cook your chicken or buy chicken that is already cooked. The soup cooks pretty quickly, so it is an easy meal to make.

Chicken and Gnocchi Soup

Ingredients:

  • 3-4 chicken breasts, cooked and diced
  • 4 cups of chicken broth
  • 1 stalk of celery, diced
  • 1 garlic clove, chopped
  • 1 carrot, shredded
  • 1/2 onion, diced
  • 1 tablespoon olive oil
  • 1 teaspoon of thyme
  • salt and pepper to taste
  • 16 ounces of potato gnocchi (found in the grocery aisle with pastas)
  • 1 1/2 cups of half and half
  • 1/2 cup of heavy cream
  • 1 cup of fresh spinach, chopped

Directions:

  • Saute the onion, celery, garlic, carrot and onion in oil over medium heat.
  • Add chicken, chicken broth, and thyme. Heat to boiling, then add gnocchi. Gently boil for 4 minutes, then turn down to a simmer for 5 minutes.
  • Add half and half and heavy cream and simmer for another 5 minutes.
  • Add spinach and cook for another 1-2 minutes until spinach is wilted.
  • Serve and enjoy!

Work At Home Moms Really Exist! Part 2

Now that summer is winding down, and the kids are getting ready to go back to school, you might be thinking about going back to work. Here is Part 2 of “Do Work at Home Moms Really Exist? Yes, it can be a reality!”

This week’s WAH opportunity is relatively new to me, but one I have found success with in a short amount of time.  I have found many legitimate work at home opportunities on the website

HireMyMom.com. When you become a member of this website, you will have access to many WAH job opportunities that are not published on other job posting websites. Typically, other WAHM post job opportunities available because they want to hire someone just like them! I have been hired for temporary jobs and permanent jobs through this site. The team at HireMyMom.com does a great job of marketing quality applicants and potential employers.While there is a fee for the website, I have found that it is quite reasonable compared to other WAH websites. First of all, there is a lot of quality postings with a wide range of job descriptions. I’ve seen everything from WAH telemarketers to magazine editors. Most recently, there are weekly postings for people with experience in internet marketing, social media networking and marketing, and article writing.

If you are not sure about starting a home-based career, there are a lot of FREE resources out there to help you get started:

  • Home Based Working Moms, http://www.hbwm.com, is part of HBWM.com, Inc. Network and was started by Lesley Pyle. Her network of helping people run a successful home-based business includes several other websites that offer free tips and business opportunities to get started.
  • The National Association of Home- Based Business Moms, http://www.nahbm.com, is a great resource to find help on getting a home-based business started, as well as seminars, newsletters and blogs from experts who have built their business from the ground up.
  • BGnetwork, http://boutiquegraphics.ning.com, is a social network I just discovered, which was created by Maggie Phillips of http://www.thecustomboutique.com. (See Angela’s article posted on July 31, 2009)

I would love to hear about any other WAHM social networks you know about. I am always looking to join new forums to get ideas and make new friends. One thing about working at home is that it can get lonely. Sometimes, I miss the day-to-day interaction with adults. But then, one of my girls gives me a beautiful smile or a kiss, and I know this is right where I am supposed to be.

Fun (Free) Family Entertainment

familyAs a single mom with two children, I know all about cutting costs! While I appreciate a quiet weekend at home, my boys don’t necessarily understand why we can’t always be doing something. One lesson I’ve learned is that it’s not really about what we’re doing, my children just enjoy doing anything with me.

Here are some of our favorite free family activities:

  1. If your family is used to eating out, try a picnic instead.  When my boys are behaving particularly well (or particularly rotten and I need a break!) we spread a blanket in the courtyard outside our apartment and eat outside. It’s better than a restaurant because there’s no wait and we don’t even have to behave.
  2. Turn your dining room into a restaurant.  After the 4,000th time I told my boys we couldn’t go to a restaurant, I half-heartedly suggested that they pretend we were in a restaurant.  They got a real kick out of it.  I made them sign in on the waiting list, called their names when their table was ready, took their order, then served them their meal (in my best snooty waiter voice).  I must have made a decent waitress because they invited me to join them for dinner!  The next afternoon, they surprised me by drawing a menu that we could all order from.  We play this game frequently now and they like to take turns being the waiter.  It’s a great opportunity for them to practice their manners.  If your children are older, let them cook you dinner and/or serve you!
  3. Instead of going to the movies, have a movie night at home.  Pop a big bowl of popcorn, turn the lights down, and watch a DVD together.  You can almost always get free rentals from Redbox.  If my kindergartner behaves at school all week, then on the weekend my boys and I spread out sleeping bags in the living room and snuggle up with a movie together. (The added bonus is that when they wake up in the morning, I can turn on cartoons and let them lay back down so Mommy gets to sleep in a little bit!)
  4. Many hardware stores and craft stores have free kids workshops on the weekends.  I’m always a bit nervous about taking two little ones to these things alone, but there’s usually a friendly store employee, a teenager, or a dad with an older child who is willing to help one of my children while I help the other.  Lowe’s Build and Grow, Home Depot Kids Workshop, and Michael’s The Knack are some of our favorites.
  5. If your children are young, they’ll likely enjoy a recreation league or high school sporting event just as much as a professional event and it’s a whole lot cheaper. Of course, you can always head to the park and start up your own game!
  6. Look for opportunities to volunteer together.  This time of year there are Habitat for Humanity builds around the country, nursing homes and hospitals almost always welcome visitors to sing, read, or just chat with the residents, you can find out about volunteer opportunities with your local animal shelter or animal rescue organization, the possibilities are endless.  You’ll have fun, teach your children valuable lessons and skills, and give back to your community all at once.  That’s what I call multi-tasking!
