Asian Salad with “Crunchies”

Dare I say this will be the best salad you’ve ever tasted?

This Asian Salad (or Chinese Noodle Salad) is hands down my favorite salad. When my husband and I were dating, my Mother-In-Law began making it for every big meal and I’ve been hooked ever since. We often like to add chicken to make it a heartier salad.

These “crunchies,” as we like to call them, are so darn good that I tend to bake up a batch and put them on other salads as well.

The nice thing about these faux croutons is you can make them ahead of time and tailor the recipe to your tastes.

Preheat your oven to 350. Place one stick of butter on a baking sheet and pop it in the oven to melt. I do this while it’s still pre-heating to save time.

Once the butter is melted a bit, I crunch up 2 packages of ramen noodles (while they are still in the bag) and pour them, along with 1 cup of sunflower seeds, 1 cup of sliced almonds, 1 cup of sesame sticks and 1 cup of Chinese noodles on the pan to brown. Bake for about 10 minutes, or until the crunchies are toasted. Be sure to give them a good shake every few minutes.

For the greens, thinly slice one head of Napa cabbage, a few romaine hearts, 1 bunch of green onions and a small bunch of cilantro. I have even bought pre-packaged bags of coleslaw and romaine lettuce when I’m short on time.

Asian Salad Dressing: 1/2 cup sugar, 1/2 cup vegetable oil, 1/4 cup vinegar, 3 Tablespoons soy sauce. For how many people this salad feeds (probably around 10 side salads), I don’t get too worked up about the calories/sugar in this dressing.

Chill the dressing for a few hours in the fridge before serving. The ingredients will settle, so give it a good shake until it’s mixed. Add the dressing right before serving or the crunchies will get soggy.

This is definitely a crowd-pleaser and super easy to make double batches for entertaining crowds. Enjoy!

 

The Best Oven Roasted Chex Mix Recipe

To me, Chex Mix is synonymous with the cold weather. When the sight of colorful leaves falling to the ground quickly turned into falling snow, and lots of it, my mom would a) bust out the crock pot and b) make some homemade chex mix. You could easily go buy one of those seasoning packets found in the cereal aisle, but it’s. just. not. the. same.

Dare I say this is the best Chex Mix? Even better than the bagged kind? Try for yourself and see. There’s nothing fancy about this recipe, just throw all of the ingredients in a roasting pan and cook in the oven for an hour.

Ingredients
  • 6 cups Corn chex
  • 6 cups Crispix
  • 4 cups Wheat chex
  • 2 cups Cheerios
  • 2 cups pretzels
  • 2 cups peanuts (optional)
  • 1 cup cashews (optional)
  • 1.5 stick butter
  • 4 Tbls Worcestershire sauce
  • 1 Tbls Seasoned Salt
  • 1.5 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cayenne pepper
Instructions
  1. Combine all cereals and nuts in a large roasting pan.
  2. Melt butter and mix in all seasonings. Stir
  3. Bake at 325 for 1 hour, stirring every 15 min.

 

Marinated Vegetables in a Grill Basket

My dad has been the grill-master of our family, always smoking ribs, grilling steaks, and frying chickens for holidays and weekend grill outs. He made these delicious veggies for the first time quite a few years ago and now they are a staple at every grill out. Vegetables taste so different marinated and grilled, even if you aren’t a veggie lover, try these and I’m sure you will agree.

What you will need:

  • Grill Basket (around $20-$30)
  • Assorted Vegetables: zuchinni, yellow squash, onion, bell peppers, etc.
  • Italian Dressing or your favorite marinade

Cut up your veggies, pretty thick and place in a ziploc bag with your favorite marinade and let it rest in the fridge for a few hours. When you are ready to grill, strain out most of the liquid and put your veggies in the Grill Basket and your ready to grill!

Grill them to your liking, they are best with a little color.
