Chocolate Chip Banana Bread French Toast

Lately I’ve been on a banana kick. Whenever my bananas get too ripe, I put them in the freezer to use later in recipes. I have a dozen bananas sitting in my freezer so I’ve been thinking of ways to use them up. There is of course the delicious banana bread with streusel topping or Nutella Swirled Banana Bread- a few of my favorites.

I’m sure this has been done before, but I wanted to do something different with my banana bread recipe because it’s just so darn good. This Chocolate Chip Banana Bread French Toast is a yummy breakfast recipe made with my leftover banana bread!


Chocolate Chip Banana Bread French Toast
(I used this banana bread recipe)

  • 1/2 cup butter
  • 1 1/3 cup brown sugar
  • 2 beaten eggs
  • 2 cups flour
  • 1 tsp. baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 1 cup smashed ripe bananas, about 3
  • 1 cup chocolate chips

Mix in order and pour into greased bread pan and bake in a preheated 350 degree oven for 45 minutes 1 hour. Keep in the fridge. (It is best to make the french toast with leftover banana bread, not freshly made.)

Cut the banana bread in thick slices and dunk in a mixture of egg and milk. Pan fry in 1 Tbls butter or oil until the outside is a bit crispy. (You want the outside crispy because the inside will be very melt in your mouth!) Serve with maple syrup or a sprinkle of cinnamon and sugar.

5 Back-to-School Lunch Ideas

School is back in session!

Although my son doesn’t take lunch to school yet, I like to think of fun and healthy lunches that can be eaten at home or packed for work or school. These back-to-School lunch ideas are make-ahead and convenient, but still healthy! Your kids will love the “mini” fruits and different colored veggies.

1. Pepperoni (natural, local) rolled up with cream cheese, grape tomatoes, raspberries, cucumber soba noodles (Whole Foods) and Snickerdoodle cookies (Enjoy Life).

2. Turkey and Cheese on pretzel bread, Terra Chips, mini banana and yellow carrots.

3. Homemade “Lunchable”- Turkey, Cheese, Crackers, mini grapes, cream cheese stuffed mini sweet peppers and jello with a few carrots (yes- carrots!).

4. Smashed Chickpea and Avocado Roll Up, applesauce, pretzels and a Luna Mini.

5. Overnight Fridge Berry Oatmeal, waffled pb & j and Dry Roasted Edamame.

5 Fun and Easy Apple After-School Snacks



It is hard to believe school is right around the corner and I go back to being the “official” kid chauffeur, homework helper and after-school snack maker. Sometimes I get in a rut of making meals and snacks that aren’t so healthy because of time and convenience.

Apples are healthy, delicious and a quick snack, but there are only so many times I can serve apples and peanut butter before my son wants variety! So I’ve come up with 5 different fun and easy apple after-school snacks.

1. Apple Pasta

Apple pasta?! No, this really isn’t pasta, but your kids will think this snack is fun! Using a peeler, peel the skin off of an apple and discard. Continue to peel little strips of apple, just like you would peel a vegetable and place in bowls to serve. Top the shaved apples with a drizzle of honey and serve with a fork!

2. Applesauce with Granola

Cinnamon raisin granola adds a little crunch and flavor to your typical applesauce after-school snack. Try different flavors or toppings like coconut or flax seed.

3. Applesauce in Edible Apple Cups

This is my favorite apple treat and I have no doubt your kids will love these edible apple cups filled with applesauce. All you have to do is cut the top off of the apple and scoop the inside out until you have a small bowl. Fill with applesauce. (In the winter you can serve warm cider in these!)

4. Microwave Cinnamon and Sugar Cooked Apples

A convenient and quick way to add variety to after school snacks, these cinnamon and sugar apples are cooked in the microwave for 2 minutes. Simply slice your apple, place in a bowl and sprinkle with cinnamon and sugar. Cover the bowl with a paper plate or napkin and cook the apples two minutes in the microwave until they are tender. This tastes almost like a dessert!

5. Apple Stacks

This is a little twist on the traditional “apples and peanut butter.” Slice the apples in rings and remove the seeds. Top the apple ring with peanut butter or chocolate hazelnut spread and place another apple slice on top, creating a “stack.” You can top with granola, chocolate chips or coconut and your kids can eat it like a sandwich!
