Baked Tortilla Chicken Over Brown Rice and Cheesy Broth

I’m a sucker for a good Mexican restaurant. The perfect tortilla chips and salsa (and a big diet soda) will make me as happy as a clam. This Mexican-inspired dish is a bit health-ified from your typical greasy Mexican restaurant meals. The (baked) chicken is encrusted in Organic Tortilla chips and sits over Brown Rice and a Cheesy Broth.

Baked Tortilla Chicken over Brown Rice & Cheesy Broth

Ingredients

For the Chicken:
4 Boneless Skinless Chicken Breasts

3 cups crushed Tortilla Chips
1 egg + splash of milk
1 Tbls Oregano
1 tsp Garlic powder
1/2 tsp Paprika
1/4 tsp Cayenne Pepper
Salt & Pepper

3 cups cooked rice

For the Cheesy Broth:
1 Tbls chopped garlic
1 Tbls Extra Virgin Olive Oil
1 cup diced red pepper
1 cup diced green pepper
1/2 cup diced yellow onion
4 oz Velveeta®
(1) 10 oz. can Ro*tel®
1 1/2 cups Chicken Broth

Additional Toppings: Salsa, Sour Cream, Cilantro, Avocado, Lime Juice

Preparation:

1. Preheat oven to 425. (I like to pound my chicken breasts if they are a bit thick.) Beat together the egg and milk in a shallow bowl. In another shallow bowl, add your crushed tortilla chips, oregano, garlic powder, paprika, cayenne pepper, salt and pepper. Mix well.

2. Dip your chicken in the egg mixture and then cover in the tortilla chip coating. Transfer to a baking pan sprayed with non-stick spray and repeat the process with the remaining chicken breasts.

3. Bake at 425 for about 20 minutes.

4. While the chicken is baking, boil your rice. Dice up your veggies and get the oil hot in a frying pan. Add the veggies and garlic and saute until tender. Add your chicken broth, Velveeta® and Ro*tel® and cook on low until combined.

5. When plating, first put your rice on the plate and surround with the cheesy broth. Add the chicken on top of the rice and top with your preferred toppings (A sprinkle of Lime Juice over the top delish on this).

Peep Brownie S’mores

Easter candy is hitting the shelves and I’ve been eyeing a few of my childhood favorites.

Cadbury eggs anyone?

My younger brother had an obsession with Peeps growing up and I would generously donate those out of my Easter basket to him. But in a Peep Brownie S’more?

Heck no! I’m not giving these away!

Actually, I want to put a disclaimer on this recipe. Bake and eat this at your own risk. This was not made for human consumption more than once a year. Seriously. I am not responsible for any weight gain (ha!)

These are super simple. First, you grease a 9×13 pan and line the bottom of the pan with Graham Crackers. Follow with your favorite Brownie mix (I used Ghirardelli Chocolate Chunk) and bake per your brownie box directions.

The next layer is (about seven) of your favorite candy bars. I used Hershey’s and Crunch bars. On top of those add your Peeps. Crank the oven up to 425 and pop the Brownie S’mores back in the oven for about 5-10 minutes or until the Peeps get large and puffy.

Finish the S’mores off with another layer of graham crackers. If you think it needs a little more melting, pop them in the oven for a few more minutes.

And Voila! The perfect way to eat Peeps.

Peep Brownie S’mores

1 box of Graham Crackers
1 box Brownie Mix
Several boxes of peeps (about 21 peeps in all)
7 candy bars of your choice.

1. Grease a 9×13 pan.
2. Layer the bottom with graham crackers.
3. Make your brownies per the box’s directions and pour over the graham crackers. Bake at the box’s recommended baking time and heat.
4. Top with your candy bars.
5. Layer your Peeps over the candy bars and raise the oven temperature to 425. Bake about 5-10 minutes or until the Peeps are large and puffy.
6. Top with graham cracker squares and feel free to put the S’mores back in the oven to melt further.

Week Four Results of My Weight Loss Journey With Amway’s Nutrilite!

It’s hard for me to believe that this marks my fourth completed week on the Nutrilite Weight loss Program for Fat Trimmers. My weight loss results for this week of 1 pound weren’t exactly what I was hoping for nor expecting.  I do feel good with the 13 pound weight loss overall for the past four weeks!

I must confess, I normally am one to get frustrated if I don’t have much of a weight loss. In the past if the numbers weren’t showing much success I would give up.  I would feel like it wasn’t worth it.

This time I feel differently.

I feel good! I feel healthy!

I feel motivated to keep going! I am looking at this as a lifestyle change something that is forever not something I am going to quit doing.

I will try it again and see if maybe I can get used to it.

As I reflect back on this past month, I only have positive thoughts about this program. I have learned a lot along the way. I plan to keep moving forward on this lifestyle change using all of the knowledge, experience and wonderful tools I have been given to be successful. I have some new favorite recipes that I have made this past month and can’t wait to make them again.
