Spiked Southern Sweet Tea

Oh yeah I went there. I messed with the sacred Southern Sweet tea. Hopefully Paula Dean won’t come after me.

Ingredients:

4 cups of water
5 tea bags (luzianne is a great one)
1 cup of sugar
¼ tea of baking sodas
1 cup of Raspberry Rum
Sliced lime
Preparation:

Bring water to a boil, remove from heat add tea bags and let sit for 10-15 minutes.
In a one gallon container add sugar and baking soda.
Pour hot tea over top and stir till sugar has dissolved.
Fill container the rest of the way with cold water, making sure to leave room for the rum.
Add rum and garnish with lime slices.

Serve in a nice tall glass filled with ice and a comfy seat under a fan. What a great way to relax on a hot summer day. This would make a great addition to your backyard 4th celebrations!

Creative Snacks Made with Jif Peanut Butter

Since 1958, Jif Peanut Butter has been a favorite of many and recognizable to all. Over the years you may have developed a favorite peanut butter variety that has become a staple in your pantry, but have you ventured out to taste some of the most recent varieties to hit the shelves? Jif Natural and Peanut Butter and Honey are two of my personal favorites that can be added to savory recipes, paired with pretzels, crackers, bananas and the most common duo - apples and peanut butter.

 

I was able to participate in the Jif Online Blogger Tasting led by Culinary College manager, Sarah Donahoe and Cody Adams, Public Relations Manager at The J.M. Smucker Company, where I learned more about the different varieties and a few unique snacks and recipes. Here are a few combinations you would have never thought tasted so good together!

  • Mix 3 parts hummus and 1 part peanut butter. This makes a delicious dip!
  • Mix powdered sugar and peanut butter to make a “fudge” add milk or water to make a thinner consistency for frostings and to fill cupcakes.
  • Add a layer of peanut butter in between your Smore.
  • Peanut butter, banana, and bacon sandwiches are delicious!
  • Peanut butter, soy sauce, garlic and ginger make a great marinade.

Peanut Butter Glazed Popcorn

Ingredients:
Crisco® Original No-Stick Cooking Spray
2 (2.8 to 3.0 oz.) bags microwave popcorn, popped
1 cup Jif® Extra Crunchy Peanut Butter OR Jif® Creamy Peanut Butter
1 cup light corn syrup
3 tablespoons butter
1/4 teaspoon salt
1 teaspoon vanilla extract
Directions: HEAT oven to 300°F. Spray rimmed baking sheet with no-stick cooking spray. PLACE popped popcorn in a very large bowl or Dutch oven. COMBINE peanut butter, corn syrup, butter and salt in a medium saucepan over medium heat, stirring constantly, until mixture begins to boil. Remove from heat, add vanilla and stir to combine.

POUR warm peanut butter mixture over popcorn, stirring gently to combine. When all popcorn appears evenly coated with peanut butter mixture, spread evenly on prepared baking sheet. BAKE 20 to 25 minutes, stirring occasionally. Remove from oven and allow to cool. May be stored in airtight container for up to one week.

Tuna Potato Salad Recipe

No mayo in this potato salad! Prime Fillet solid white Albacore tuna combined with fresh spices really make this a potato salad recipe everyone will be asking for. Using a vinaigrette mixed with country Dijon mustard instead of mayo makes it lighter and more flavorful. Chef Scott Leibfried, along with Bumble Bee and The Bee Squad attended BlogHer to showcase simple recipes.
