Ash Wednesday is this week and it begins the period of 40 days of preparation before Easter. Many Christians practice the act of fasting during this time, which includes not eating meat on the Fridays of Lent. {You can learn more about the specifics of Lent here}. If you are a meat-eating family like us and don’t typically serve many vegetarian or seafood meals, then coming up with meals to serve during Lent {that are more edible than tuna casserole} can be hard. I made the fish taco’s just not the salad. We served them in fresh corn tortillas. So yummy!! My husband loved them. Thanks for the variety of recipes. During lent I get into a rut sometimes.
