Loaded Rosemary Fries with Beer Braised Beef

This definitely isn’t a typical meal I make for my family, but it sure is something I’d serve at the Superbowl. These Loaded Rosemary Fries with Beer Braised Beef is like a fancier version of chili cheese fries or loaded nachos or a combination of the two.

I like to turn leftovers into new meals and this is exactly what I did here. The night before I made a rump roast in the slow cooker. I first seared it, then slow cooked it about 6+ hours with a bottle of dark beer and onion soup mix {here’s a homemade version}. You can serve it that night with roasted potatoes and veggies or shred it for sandwiches or tacos. The next night you can plan for these loaded fries and half the work is already done for you.

For the loaded fries, thinly sliced 2 large baking potatoes and 1 sweet potato into fry shapes. Place them on a greased baking sheet or line the sheet with foil. Drizzle about 2-3 Tbls of olive oil, 2 Tbls chopped fresh rosemary, sea salt and pepper. Bake at 425 for 30-45 minutes or until crispy.

Loaded Rosemary Fries with Beer Braised Beef

Place the hot fries on a bed of baby arugula and drizzle with ranch and sweet chili sauce {Maggi is my favorite and found at most grocery stores}. If you haven’t tried the combination of ranch + sweet chili sauce… just trust me.

Top with green onions, cilantro, parmesan cheese and the beer braised beef.

Loaded Rosemary Fries with Beer Braised Beef
serves 2-3

Leftover Beer Braised Beer {however much you desire!}
2 Large baking potatoes
1 large sweet potato
3 Tbls. Extra Virgin Olive Oil
2 Tbls. chopped fresh rosemary
sea salt & pepper to taste

Toppings: Drizzle of ranch and sweet chili sauce. 1/4 cup chopped cilantro. 1/4 cup chopped green onions. 1/4 cup parmesan cheese. {optional: 3 cups of baby arugula to place your fries on}

I guarantee this will be the favorite game day appetizer!
