Meal Plan Week #2
After Meal Plan Week #1 I’m starting to get the hang of this meal planning. I haven’t started planning meals according to grocery sales yet, but that is my next step. I’ve found that I already save so much money going to the grocery store with a definite list and not picking up random snacks and produce that I think I might use for the week.
I usually include a few new recipes each week combined with a few classic or family favorite meals. If we don’t like the new recipes, I either delete them from my Pinterest board or take the recipe out of my magazine cookbook.

Monday it is supposed to snow so I figured this Meatball and Spaghetti Soup would be perfect. I’ll add a little garlic bread and small side salad.

Tuesday: Pork Burrito Bowls with Cilantro-Lime Rice. We will also add in Marinated Veggies since this is one of my hubby’s favorite (and only) way to eat veggies.

Wednesday: BBQ Pork Sandwiches (use leftover pork from yesterday) with Asian Salad. This is a meal that’s in my regular rotation.

Thursday: Homemade Tomato-Basil Soup with Grilled Cheese Sandwiches. Grilled Cheese and tomato soup is another meal I know my son and hubby like. I’ve just never made homemade tomato soup before!

Friday: I only plan five meals a week in case something comes up and we don’t have dinner at home or we go over to relative’s houses, etc. This Friday the hubs and I are going to dinner and the Winter Jam Concert, so I will be saving grilled chicken with roasted potatoes (sweet and regular) with onions and carrots for one day this weekend.
Throughout the weekend we usually eat leftovers. If all of the leftovers are gone or we are craving something else, it’s usually something quick and easy- eggs and toast, quesadillas, spaghetti or chicken nuggets.
I also plan to make a few snacks/desserts throughout the week when I have time like these Skinny Chocolate Chip Buttermilk Scones and Homemade Chex Mix.

I love meal-planning. LOVE it — my life is so much easier the weeks I plan out our food. I haven’t been posting them this month because of how hectic things are — I need to do so because it is always so much easier to pull of the blog for my recipe links!

I started meal planning about 2 weeks ago and I love it! It saves so much time and money. I now remember to take out what I need before work and the kids just know what we are having every night. I also only plan 5 nights…keep those nights for leftovers or going out!
