I must apologize in advance for these sinfully delicious cookies… or cookie balls, whatever you’d like to call them. My aunt made these one year for Christmas and I was in heaven. After eating about twenty of them I found out they had three sticks of butter – ah! So now I only make them once or twice a year because they will seriously sit in my fridge and I will just eat them throughout the day.

You will need 1 1/2 cups of butter, 3 cups of oatmeal, 6 oz of chocolate chips, 3 1/3 cups of powdered sugar, 1 1/2 cups of coconut flakes, and 1 tsp. vanilla. See, I told you this was sinful.

All you do is mix all of the ingredients in a large bowl. By hand is the easiest because you are going to have to squish that butter and get it worked in with all of the other ingredients to look like a dough like this:

I love the easiness of decorating these. By far, a little roll around in sanding sugar is the best.

How simple was that?
You could make any color under the sun and color-coordinate with the occasion. I’m warning you though, don’t make these too often. I’m not responsible for any weight gain :)

- 1 1/2 cup butter, room temperature
- 3 cups quick cooking oats
- 6 oz. chocolate chips
- 3 1/3 cups powdered sugar
- 1 1/2 cups shredded coconut
- 1 tsp. vanilla
- sanding sugar
- Mix all ingredients in a large bowl by hand. Form into small balls and roll in sanding sugar. Keep refrigerated.

Very strange! Leave the butter cold and try adding in more oats is all I can think of. The dough should be very thick and not too sticky-
Well, it’s more sticky than runny, it’s hard to make into balls. I did everything exactly by the recipe. I might try and add more oats and see what happens.
Hi Ashley, the dough should be more thick than runny. Are you adding 3 cups of oats? Are you melting the butter instead of room temperature? Look over the ingredients again and let me know if you think of anything!
The dough is too runny, it won’t roll into balls and stay that way. What am I doing wrong?

I am totally and utterly in love with this recipe! I adore coconut (and chocolate of couuurrsee!) but the oven we have is a complete liability, so having a recipe that by passes this issue is fabulous! Lovely post indeed :)
