Marinated Vegetables in a Grill Basket

My dad has been the grill-master of our family, always smoking ribs, grilling steaks, and frying chickens for holidays and weekend grill outs. He made these delicious veggies for the first time quite a few years ago and now they are a staple at every grill out. Vegetables taste so different marinated and grilled, even if you aren’t a veggie lover, try these and I’m sure you will agree.

What you will need:

  • Grill Basket (around $20-$30)
  • Assorted Vegetables: zuchinni, yellow squash, onion, bell peppers, etc.
  • Italian Dressing or your favorite marinade

Cut up your veggies, pretty thick and place in a ziploc bag with your favorite marinade and let it rest in the fridge for a few hours. When you are ready to grill, strain out most of the liquid and put your veggies in the Grill Basket and your ready to grill!

Grill them to your liking, they are best with a little color.

    I usually grill these veggies (yellow summer squash, zucchini, peppers, onions, potatoes, mushrooms) in a grill basket after soaking them in water for awhile. I’m going to try them this evening for my family in Newman’s Own Oil and Vinegar salad dressing (my personal fave). I’ll let you know the results! I will be preparing pork tenderloin chops, smoking them over mesquite charcoal…probably going to counter with a starch of angel hair pasta.
