My husband and son are pretty picky eaters, and will only eat a few different kinds of vegetables, so whenever I can sneak a veggie in, I give myself a pat on the back. We are a typical Midwest family, with a diet that consists of many meat and potato meals. This recipe brings the best of both worlds together: you’ve got your meat, you’ve got your potato, and you’ve got your veggie, all in one. I served this BBQ Chicken Topped Baked Potato (with a hidden cauliflower mash, shh…), along with asparagus, one of the few veggies my family enjoys.
BBQ Chicken Baked Potato
For the chicken:
1 small rotisserie chicken
1/2 cup Barbecue sauce
1 Tbls Worcestershire
2 Tbls Ketchup
1 tsp. mustard
salt and pepper
For the Potato:
4 large baking potatoes
1/4 cup shredded Parmesan Cheese
1/2 bag frozen cauliflower or 2 cups fresh cauliflower, steamed
3 Tbls butter
This is a very easy recipe, so you can tailor it to fit the amount of people in your family. You can use 4 large potatoes or 6 medium. Bake the potatoes for about 45 minutes to an hour, until soft. To speed things up, you can put them in the microwave for about 10 minutes. When the potatoes are done, cut off a little of the side and scoop out the potato with a spoon. Don’t take too much out, you don’t want it to collapse.
I like to buy rotisserie chickens often, because they are quick and easy, but you can cook and shred chicken breasts if you prefer. I place the chicken in a saucepan with the barbecue sauce, Worcestershire, ketchup, mustard and a little salt and pepper and heat thoroughly.
Prepare the cauliflower as stated on the directions. If you are using fresh cauliflower, use a steamer. Using a food processor (a blender works fine too) I blend the cauliflower until it’s a fine consistency. Surprisingly, it looks like mashed potatoes!
In a bowl, I mix the potatoes, cauliflower, parmesan cheese, and butter. Once it’s mixed thoroughly, I stuff it back in the potato skins and top with the barbecue chicken.
