Vegan, Raw Recipes In Idiot’s Guide to Eating Raw Cookbook

My younger sister recently started an eco friendly blog called Sundae Mornings. She is a vegetarian and started living the “raw food lifestyle”. I asked her to guest post about the new book, The Complete Idiots Guide to Eating Raw. Enjoy her guest post below!

My lovely sister gave me a great book that pretty much has everything you need to know about eating raw, including some delicious recipes. Its called The Complete Idiot’s Guide to Eating Raw it’s a really informational book. It has different foods youcomplete idiots guide to eating raw should get at the store and where you get all your vitamins and proteins while eating raw. It will definitely be my go to book when I don’t know what an ingredient is in a recipe or even when I just want to try a new recipe.

One of the things I used to eat A LOT of and don’t anymore is cheese, so when I saw a recipe for walnut cheese in this new book I was skeptical but extremely excited to try it. I also just got a new food processor so I want to “cook” all the time! Here is the recipe, I’m calling it walnut dip because to me it seems more like a dip then a cheese, of course this could just be the way I made it but anywhoo.

Walnut Dip:

1) In your food processor or blender mix together 2 cups of walnuts and 1 cup of water

2) Put the mixture in a glass jar (I put it in a small glass bowl) and cover tightly with siran wrap, cover with a towel, and leave in a warm dark place overnight.

3) The Next day you can mix in:

  • 1/4 tsp sea salt
  • a pinch of red pepper flakes
  • 1/3 cup of chopped red pepper
  • 2 1/2 tbs green onion

4) You can serve immediately or cover tightly and put in the refrigerator for up to 3 or 4 days

raw walnut dipThis dip is really easy to make and you can put it with many things, you can eat it with vegetables, put it on crackers, or even put it in your nori seaweed wrap:) I will be working through my Idiot’s guide, learning a lot and posting some of the recipes along the way! Let me know if you have any different variations of this recipe or any good vegan raw food cheese recipes:) Love, Meagan.

  1. A good friend of mine has been turning us on to vegan cooking more and more, and one recipe I tried recently is one that promised to be the “best vegan mac n cheese ever” — and I have to say it really lived up to the hype. Here’s a link to the recipe:

I have to say the one thing I was most wary of in eating/cooking vegan was the idea of cheese alternatives, but my fear has been assuaged. Thanks for sharing the recipe for the “dip!”
