Banana Bread With Streusel Topping

I don’t really like banana flavoring in anything else besides banana bread. Banana pudding? Nope. Banana Split? Nope. But I could eat warm banana bread all day long, especially with peanut butter…. yum!
Make sure to use very ripe bananas in this recipe. I usually make banana bread with leftover bananas that no one eats. To hurry up the process you can put your bananas in a paper sack and that should make them ripen faster.
I am not totally happy with the streusel on the bread.. I wish it was…. softer. I will experiment and get back to you.
Banana Bread with Streusel Topping

1/2 cup butter

1 1/3 cup brown sugar

2 beaten eggs

2 cups flour

1 tsp. baking soda

1/2 tsp salt

1 tsp vanilla

1 cup smashed ripe bananas, about 3
Mix in order and pour into greased bread pan. You don’t have to, but I used the struesel recipe from The Pioneer Woman. Place the streusel on top before baking.
Bake at 350 for 45min-1 hr.

Love this. Would add 1/4 – 1/2 cup of chopped dark chocolate right after the bananas.

This recipe looks absolutely delicious! I actually have a bunch of very ripe bananas in the kitchen that I wasn’t sure what to do with – I was going to make the whole family banana smoothies, but I think I’ll try out this recipe for dessert tomorrow instead. Thanks for sharing!
