Make Ahead Meals for Busy Moms: Bacon Tomato Mini Cups – CLOSED

I was extremely excited when Jane Doiron, author of Make Ahead Meals for Busy Moms approached me to check out her cookbook.  I’m always on the lookout for quick, easy and delicious meals.  I have a folder in my kitchen dedicated to recipes I have ripped out of magazines.  I also have my fair share of cookbooks and love when I find recipes that are easy and make my family happy at the same time.

Make Ahead Meals for Busy Moms is full of delicious recipes like: Freezable Lemon Bars, Tiramisu, Chicken Piccata, Stuffed Beef Tenderloin and more – all with prep time you can do ahead of time or freeze.  With all the football games recently, I wanted to try to make one of Jane’s appetizers.  This recipe is so easy, you don’t need step-by-step photos, so I just took a few!

Bacon Tomato Mini Cups

Ingredients:

  • 3/4 cup uncooked bacon, chopped into 1/2 inch pieces
  • 1/2 cup light mayonnaise
  • 1/2 cup Swiss Cheese, shredded
  • 1 plum tomato, finely chopped
  • 1 teaspoon dried basil (If you have fresh, I would recommend it.  Nothing beats fresh!)
  • 1 (7.5 oz) tube refrigerated buttermilk biscuits

One Day Ahead: Chop the bacon and cook in a skillet over medium heat until brown and crispy.  Remove bacon to paper towels to drain.  Cool completely.  In a medium bowl, combine the bacon, mayonnaise, cheese, tomato, and basil.  cover and refrigerate until ready to bake.

Cooking Directions: Preheat the oven to 450.  Separate the biscuit dough into 10 pieces.  Cut each piece in half and press one piece into a mini muffin tin like a pie crust.  Finish with the rest of the dough in the same manner.  Place a tablespoonful of bacon mixture in the center of each cup.  Bake for 8-9 minutes or until golden brown.  Serve Warm.  Makes 20 appetizers.

Tip: You can also cook these ahead, refrigerate them, and warm them up in the oven at 375 for 3-5 minutes.

  108. Not sure if anyone else has already mentioned this, but if you like pancakes and waffles you should try organic batter blaster pancake mix that comes in a spray can. i know that sounds crazy. i found it at whole foods.
